Me again... not sure if these forums are getting much interest, but this is my fave recipe of the moment:
Fry/sautee (in oil and water so the oil doesnt heat up too much) chopped onions and fresh, chopped ginger (about 1/2inch) until soft.
Add cubed/chopped sweet potatoes, and possibly a little bit more water so the sweet pot steams lightly in the water but gets the flavour of the onions.
add cubes of tofu (about 1/2 a block, so 125g approx)
add a stock cube or 1tsb bouillon
add 1tsp each of cumin, tumeric, corriander, and 1/2tsp chilli powder/cayenne
add more water as necessary to allow sweet pot to cook.
Then finally add the coconut milk or coconut cream!
cook for further 5-10mins and serve with brown basmati rice... yum!
(you can add fresh chopped corriander at the end too!)
Great if you miss creamy style foods x |
