1. enrgy egg replacer is great for baking but you have to alter direction. 1/2 the water and add 1/2 oil. Eggs are fat in a recipe and not just a binder (like the potato starch in Enrgy. Baked goods come out much better.
2 in biscuits replace the eggs in the recipe with your favorite vegan Mayo. Trust me and for the same reason as above. I wouldn't try this with sweet confections however the "mayo" taste will survive in the sweets.
3. Lehmans.com sells Sweet Caramel Popcorn Glaze it is vegan (has sugar though) follow the directions on the bottle and add peanuts, you have vegan cracker jacks.
