I have a delicious lemon bar recipe, that is vegan, easy and I have to alternatives for either whole wheat flour, or cooked brown rice.
1-1 1/2 cups cooked brown rice
1/2 cup oatmeal & 1/2 cup chopped nuts(I used pecans)
1/4 cup non-dairy unsweetened vanilla milk(I used almond milk)
2 tbsp Earth Balance Soy Garden margarine
1 tsp agave nectar
1 tsp vanilla
1/8 tsp salt
1 cup whole wheat unbleached flour
4-5 tbsp Earth Balance Soy Garden margarine
1/4 cup raw sugar
2 tbsp agave nectar
1/4 tsp vanilla or more
Mix ingredients in a small bowl. In a 8x8 pan add crust mixture and bake for 15 minutes or golden, on 350. Remove from oven.
For brown rice crust: chop/smoosh/blend cooked rice and almond milk, it won't be completely smooth but it works, then add the rest of the ingredients.
1 cup fresh squeezed lemon juice
4 lemon's zest
1/2 cup non-dairy unsweetened vanilla milk(I used almond milk)
1/2 cup raw sugar
1/4 cup agave nectar
3 tbsp corn starch or whole wheat unbleached flour
1/2- 1 tsp baking powder
1/8 tsp salt
Whisk ingredients till smooth. Add filling to your crust and bake for an additional 20 minutes, on 350. Remove from oven and let stand for 10-15 minutes. I also recommend you refrigerate for an hour or more, 1 full day is best.
I also added a few blueberries to my filling, try adding a vegan cream cheese mixed with vanilla too!
